Banana Bread

1984 Wisconsin State Fair Blue Ribbon Winner

  • 2 medium ripe bananas
  • 2 eggs
  • 1 3/4 cups unsifted flour
  • 1 1/2 cups sugar
  • 1/2 cup vegetable oil
  • 1/4 cup plus 1 tablespoon buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts
Preheat the oven to 325°. Grease 9 x 5-inch loaf pan. Combine all ingredients and mix well. Transfer to the prepared pan. Bake until top is golden brown and splits slightly, usually about 1 hour and 20 minutes. Best served warm.

Do not double recipe.
