- 2 medium ripe bananas
- 2 eggs
- 1 3/4 cups unsifted flour
- 1 1/2 cups sugar
- 1/2 cup vegetable oil
- 1/4 cup plus 1 tablespoon buttermilk
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1 cup chopped walnuts
Preheat the oven to 325°. Grease 9 x 5-inch loaf pan. Combine all ingredients and mix well. Transfer to the prepared pan. Bake until top is golden brown and splits slightly, usually about 1 hour and 20 minutes. Best served warm. Do not double recipe.
