Cheese-Cornmeal Shortbread Crackers


 
  • 1 cup grated Parrano cheese
  • 1/4 cup unsalted butter
  • 1/4 cup sugar
  • 1 egg
  • 3/4 cup plus 2 tablespoons flour
  • 1/3 cup yellow cornmeal
  • Salt
  • 1/4 teaspoon baking powder
Preheat oven to 375º. Beat cheese, butter, and sugar in bowl until well blended. Add egg and beat. Stir together flour, cornmeal, a dash of salt, and baking powder. Add flour mixture 1/4 cup at a time to form a stiff dough.

Form into 1-inch balls. Place on an ungreased cookie sheet. Flatten to 3/8-inch thickness with the tines of a fork. Bake for 12 - 14 minutes in the preheated oven until crackers are golden and firm. Makes 24 crackers.
