Preheat
oven to 350°. Grease an 11 x 7-inch pan and set aside. In a medium mixing bowl, cream together sugar, honey, shortening, and salt. Beat in eggs. Set aside. Soak cornmeal in ¾ cup milk and set aside. Sift flour and baking powder into shortening mixture. Stir in cornmeal mixture and remaining ¾ cup milk. Pour batter into prepared pan. Bake in preheated oven 30 minutes or until golden brown around the edges and bread springs back when gently pressed. Cut and serve warm or cooled. |
