Low Fat Banana Muffins


  • 1 cup flour
  • ½ cup sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 eggs
  • 3 medium ripe bananas, mashed
  • 1 ½ cups Bran Flakes
  • ¼ cup chopped walnuts
Heat oven to 350°. Mix flour, sugar, baking soda, and salt in large bowl. Beat eggs in small bowl, stir in bananas. Add to flour mixture, stir just until moistened (batter will be lumpy). Stir in cereal and nuts. Spoon batter into muffin pan, greased with no stick cooking spray, filling each cup 2/3 full. Bake 30 minutes or until golden brown. Serve warm.
