- 1 cup buttermilk
- 1 tablespoon vegetable oil
- 1 egg
- 1 cup flour
- 1 tablespoon sugar
- ½ teaspoon baking soda
- ¼ teaspoon salt
- Blueberries (optional)
Mix buttermilk, oil, and egg together. Add remaining ingredients. Do not overmix.
Coat griddle with vegetable oil spray and ladle batter onto griddle when hot. Cook pancakes until bubbles form on top, then turn over to finish cooking.
Makes 5 pancakes.
