Harvest Potato Casserole


  • 6 cups shredded hash brown potatoes, thawed
  • 1/3 cup chopped onions
  • 2 cups (16 ounces) sour cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound fully cooked breakfast sausage links
  • 1 cup (4 ounces) shredded cheddar cheese
Combine all ingredients except sausage and cheese. Spoon into a greased 13 x 9 - inch baking pan. Arrange sausage links on top of potato mixture. Cover. Bake at 350° for 35 minutes until bubbly. Remove from oven; sprinkle with cheese. Bake uncovered, 5 minutes longer.

Makes 6 servings.
