- 1 1/4 cup powdered sugar
- 1 cup butter
- 1 tablespoon grated lemon peel
- 1 tablespoon lemon juice
- 1 egg
- 2 1/2 cups flour
- 1/4 teaspoon salt
Preheat oven to 400°. Beat powdered sugar and butter; add lemon peel, lemon juice, and egg. Blend well. Stir in flour and salt until well mixed. Fill cookie press with dough. Press a long ribbon of dough onto an ungreased cookie sheet. Score the cookies at 2 1/4-inch intervals. Bake 5 - 8 minutes until set. Cut at score lines with a sharp knife. Remove immediately from cookie sheet. Cool. Glaze
- 1 cup powdered sugar
- 4 - 5 teaspoons lemon juice
- 2 teaspoons powdered sugar
Mix 1 cup of powdered sugar with the lemon juice. Drizzle over cookies. Sprinkle with powdered sugar immediately.
