Shortbread Cookies


  • 3/4 pound unsalted butter at room temperature
  • 1 cup sugar, more for sprinkling
  • 1 teaspoon vanilla
  • 3 1/2 cups flour
  • 1/4 teaspoon kosher salt
Cream together the butter and 1 cup of the sugar until just combined. Add the vanilla. In a medium bowl, sift together the flour and salt. On low speed, add to the butter-sugar mixture. On a floured surface, roll and shape the dough into an oval. Wrap in plastic and chill for 30 minutes. Preheat oven to 350°. Roll the dough to 1/2-inch thickness and cut with a 3-in cookie cutter. Place on an ungreased cookie sheet, sprinkle with sugar, and bake for 16 minutes, until the edges brown. Cool to room temperature.
