Sugar Cookies

  • 1/2 cup unsalted butter
  • 3/4 cup packed light brown sugar
  • 1 teaspoon vanilla
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon non-aluminum baking powder
  • 1/4 teaspoon sea salt
In a large bowl with electric mixer at medium speed, beat butter, sugar, and vanilla until light and fluffy. Beat in egg until well blended. In a separate bowl combine flour, baking powder, and salt; then with mixer at low speed, beat into butter mixture to blend well. Form dough into two long cylinders (about 2" in diameter). Wrap in plastic and refrigerate until firm, at least an hour.

Heat oven to 350°.

Cut dough into 1/2-inch slices and place about 1-1/2 inches apart on an ungreased baking sheet. Bake 10 - 12 minutes until lightly browned. Cool on a wire rack and store in an airtight container.
