Inside-Out Chicken Cordon Bleu


  • 1/2 cup plain bread crumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons butter
  • 1 teaspoon olive oil
  • 4 skinless, boneless chicken breasts, thin sliced
  • 6 ounces thin-sliced deli ham
  • 4 ounces Swiss cheese, sliced
Place bread crumbs, salt, and pepper in a Ziploc bag. Shake to combine. Heat oil and butter over medium heat in an extra deep non-stick skillet with a lid.

When butter is melted, place chicken in the bag, shake to coat with bread crumbs then immediately place in skillet. Cook until golden brown, about 4 minutes. Turn and continue to cook 3 minutes more. Turn chicken back over and place sliced ham on each breast then top with cheese. Cover and cook until cheese melts, about 1 minute.
