Chicken Salad Croissant Sandwiches


  • 1 rotisserie chicken (from the local grocer, deboned, meat cut into bite-sized pieces
  • ¼ cup walnuts, toasted and chopped
  • 1 cup red grapes, cut in half
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 2 tablespoons finely chopped fresh tarragon
  • Salt and pepper to taste
  • Croissants
  • Arugula
In a bowl, combine chicken, nuts, and grapes.  Separately, blend mayonnaise, sour cream, tarragon, and salt and pepper.  Add to chicken and mix well. 

Serve on croissants, on a bed of arugula.
