- 1 rotisserie chicken (from the local grocer, deboned, meat cut into bite-sized pieces
- ¼ cup walnuts, toasted and chopped
- 1 cup red grapes, cut in half
- 1 cup mayonnaise
- ½ cup sour cream
- 2 tablespoons finely chopped fresh tarragon
- Salt and pepper to taste
- Croissants
- Arugula
In a bowl, combine chicken, nuts, and grapes. Separately, blend mayonnaise, sour cream, tarragon, and salt and pepper. Add to chicken and mix well. Serve on croissants, on a bed of arugula.
