Strawberry Jam


  • 2 quarts strawberries
  • 1 package pectin
  • 7 cups sugar
Wash and take the tops off the berries. Crush the berries, one layer at a time. Measure 4 1/2 cups berries and put them in a pan. Add pectin and place over high heat. Stir until mixture comes to a rolling boil. Add the sugar and return to a boil. Boil hard 1more minute, stirring constantly. Remove from heat and let set 5 minutes.  Spoon off any foam that may be on top. 

Ladle into sterilized jars and process in a hot water bath for 10 minutes. 

Yield: 4 pints
