- 3/4 cup seasoned dry bread crumbs
- 3 cups mashed potatoes
- 2 eggs
- 1/2 cup parmesan cheese, grated
- 8 ounces mozzarella cheese, thinly sliced
- 2 tablespoons butter, softened
Sprinkle 1/4 cup bread crumbs on a greased shallow baking pan. Set aside. Mix well mashed potatoes, eggs, and parmesan cheese. Spread half in prepared pan, top with mozzarella cheese slices. Spread remaining potato mixture over the cheese. Mix remaining bread crumbs with butter. Sprinkle on top. Bake in preheated 350° oven for 50-60 minutes, until potatoes are firm and crumbs are brown. Let stand 15 minutes.
