- 1 pound small red potatoes
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 teaspoons dill weed
- 2 tablespoons butter
Wash potatoes, peel half, leaving the half that is least blemished unpeeled. Slice the potatoes into 3-4 pieces. Bring 4 cups of water to a boil; add the potatoes and salt. Cook 8 - 10 minutes until fork tender. Drain and return to the pan and cover to dry. Toss potatoes with butter and seasonings. Serve immediately. Makes 2-3 servings.
