- 4 medium baking potatoes (7 ounces each)
- 2 tablespoons butter or margarine, room temperature
- ½ cup sour cream, room temperature
- 1 (3 ounces) package cream cheese, room temperature
- 1 teaspoon onion salt
- 1 to 2 teaspoons chives
- 1/8 teaspoon pepper
- Paprika
- Parsley flakes
Pierce potato skins with a fork and bake potatoes in oven at 400° for 1 hour or in microwave for about 10 minutes or until done. Let cool until easy to handle. Cut an oval slice from the top of each potato. Carefully scoop inside of potatoes into a mixing bowl, reserving shells. Add butter, sour cream, cream cheese, onion salt, chives and pepper. Beat with an electric mixer until smooth.
Spoon potato mixture back into potato shells. Garnish with paprika and parsley flakes. Heat in microwave 3 minutes or until heated through.
