Vanilla Cupcakes with Chocolate Frosting

Cupcakes:
  • 1 3/4 cups flour
  • 1 tbsp. baking powder
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup plus 2 tbsp. milk
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 tbsp. vanilla
Preheat oven to 375°. Line muffin pans with 18 cupcake papers; set aside. Sift flour and baking powder into a large bowl. Add the remaining ingredients and heat beat until smooth. Spoon batter into cupcake papers, half full. Bake 12 - 14 minutes or until a toothpick inserted in the center comes out clean.
 
Chocolate Frosting:
  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 tsp. vanilla
  • 1/4 cup plus 2 tbsp. milk
Put the softened butter into a bowl. Sift the powdered sugar and the cocoa over the butter. Cream together on a low speed to blend. Add vanilla and milk and beat on medium speed until the frosting is smooth. Spread on cooled cupcakes.
